SALMON CAKES

3 cups mashed potatoes, cooled to room temperature
2 cups fresh salmon, cooked and flaked
1/3 cup chopped green onions
2 eggs, lightly beaten
½ tsp. salt
½ tsp. pepper
1 cup dry bread crumbs
¼ cup butter
¼ cup vegetable oil

In large mixing bowl, combine potatoes, salmon, onions, eggs, salt, and pepper to taste. Shape mixture into 6 patties and coat with bread crumbs.  In large skillet over medium-high heat, melt half the butter with half the oil. Fry salmon cakes for 3 to 5 minutes on each side or until golden brown, adding remaining butter and oil when cakes are turned.

Makes 6 servings.

Top these salmon cakes with homemade chili sauce or tomato relish. A crisp green salad and a glass of vegetable cocktail complete the main course. For dessert, indulge the family with warm apple crisp and ice cream.
