CHICKEN FRIED STEAK

2 beef cubed steaks
2 tsp. salt
Dash of pepper
1 egg, lightly beaten
½ cup milk
2 tbl. flour
1½ cups flour for dredging steak
Oil for deep-fat frying

Sprinkle steaks with salt and pepper. Mix egg and milk in shallow bowl or pie dish. Add flour; mix until very smooth. Dip each steak in batter; dredge generously in flour. Place battered steak into preheated 375º oil; deep fry 5-7 minutes or until steaks are golden brown on both sides. Drain on paper towels.

 

 

SAUSAGE GRAVY
 
1 lb. country sausage patties (mild, hot, or sage), sliced
4 tbl. flour
2 cups hot milk
Salt and black pepper, to taste

Cook sausage patties in large skillet until browned. Remove and drain on paper towels. Stir flour into 4 tablespoons drippings in skillet and cook about 2 minutes, stirring constantly. Add milk and cook about 5 minutes until thickened and bubbly. Add additional milk if gravy seems too thick. Season with salt and pepper.
