FIREHOUSE CEDAR STEAKS

This is our favorite way to cook a great steak outdoors on a barbecue. This idea came from preparing simple meals when out on the fire line after a hard days work. The cedar smoke gives the meat a wonderful flavor and tenderness that will melt in your mouth. Remember, never turn the steaks or you will confuse the juices. This also applies to fish and poultry.

1 Untreated cedar wood plank per steak
1 Beef rib eye steak (The Best Cut)
1 Red onion
1 Green bell pepper

Untreated cedar fence slats can be purchased ahead of time at your local home center or a cedar roof shake can be used. Cut the plank to size, about 1" larger on all sides of the steak. Use a vegetable oil and brush on all sides of the cedar plank allowing the wood to absorb the oil.
Next, brush the oil on the steak and season both sides. Slice the red onion and bell pepper. Place the seasoned steak on the plank and adorn with onion and pepper.

The key to cooking this FIREHOUSE STEAK is indirect heating either on a charcoal or gas barbecue grill.

Place the prepared steak on a hot grill and monitor it for about 30-40 min. Keep the barbecue closed, this will trap the smoke and allow the heat to cook it on all sides. If flame flares on the grill or the wood extinguish with a handy spray bottle. Cook until liking. We prefer slightly rare.
